A couple of other data points. Like Gary Bosselman's LT-1 #2551 (D25), I have a 71 LT-1 VIN #2638 with the casting date of H150 (Aug 15th)... Assembly date of V0819CGZ (Aug 19th) .... build date of D27 (November 27) after the strike. Also for my Dec 29, 71 LT-1 .... casting date of L80 (December 8th).... Assembly date of V1209CGZ (Dec 9th) and build date of E29 (Dec 29th)
Mark, 1970 #14803 is G09 or Jul 9th; 1971 #16798 is J11 or May 11

Dave and Troy,
Your cars are added to the mix...here's what it looks like now.
The chart is 1st sorted by model year and then by oldest Casting Date.
Based on these 18 cars (a very small sample of all made in those years), the timing was:
Roughly 6 weeks from foundry cast date to engine assembly date
Then ~ 4 weeks from engine assembly to vehicle assembly (BBD)
