The fact that the valves are stuck open might mean that there is corrosion in the valve guides. So, it's possible that you will either need new guides OR have the guides reamed for oversize valve stems.
The GM valves for your application, GM #3849814, intake, and GM #3849818, exhaust, are discontinued and difficult or expensive to find NOS. Acceptable replacements are manufactured by Sealed Power. The intake valve is their number V-1756 and the exhaust V-1755. I believe these are available with oversize stems if you choose to go that route rather than have the guides replaced.
The original valve springs are GM #3735381. These are still available from GM but they carry a stiff GM list price of about 25 bucks each. Acceptable replacements are available from Sealed Power under their number VS-521. You could also convert to the 67+ valve springs, GM #3911068. These are also still available from GM for about 11 bucks each, GM list. Sealed Power replacement is VS-677. Use eitherr with valve spring caps GM #14003974.
Available GM parts can be obtained from any GM dealer. Sealed Power parts can be obtained from most major auto parts stores or online from sources like Rock Auto or Summit Racing.
You will likely need a lot of other engine parts for a rebuild. Things will get expensive. In Appreciation of John Hinckley- Top
